Larb moo - Thai spicy pork salad

Ingredients

Pork mince

Kaffir lime leaves
finely chopped
1
chilli or a tsp of chilli flakes
(optional)
2
shallots
finely chopped
1
handful
mint leaves
finely chopped
lettuce leaves
washed and for serving
Sauce
2
tbsp
palm sugar
2
tbsp
fish sauce
1/2
lime
Instructions
Prepare all ingredients ready to cook
In a hot wok, fry shallots in 1 tbsp of vegetable oil for 2-3 minutes
Add pork mince and fry for 2-3 minutes
Add the leaves, chilli, palm sugar and fish sauce and keep stir frying for a couple of minutes
Squeeze lime juice and mix. Ready to serve in lettuce leaf boats.
