Pad thai

A quick, tasty dinner

Ingredients

  • rice noodles softened by soaking in hot water
  • 0.5 onion or 2 shallots thinly sliced
  • 4 chicken thighs
  • 1 handful beansprouts
  • 1 strip preserved radish (optional) - roughly chopped

Pad thai sauce

  • 2 tbsp palm sugar
  • 1 tbsp fish sauce
  • 1 tbsp light soy sauce

Topping (for serving)

  • 1 handful salted peanuts chopped roughly
  • 1 handful coriander chopped roughly
  • 2 wedges lime

Instructions

  • Prepare all ingredients before cooking
  • Cook chicken thigh in hot wok, remove from wok
  • Heat 1 tbsp of vegetable oil in wok, fry onion/shallots and soften
  • add preserved radish, beansprouts to wok and fry for a couple of minutes
  • Add cooked chicken and softened noodles to wok and mix well
  • add Pad Thai sauce to wok and mix well
  • Serve with toppings
